The specific tasks of culinary food science include refining cooking methods, research and development of new dishes, and reduction of food contamination and food waste during cooking. Innovation is needed to transform our relationship to food and the planet fundamentally and tackle the immense challenges humankind faces in the areas of affordable nutrition, world hunger, and sustainability.
[Humana Communitas]: Social innovation is the process of developing and deploying effective solutions to challenging and often systemic social and environmental issues in support of social progress. We will identify and accelerate transformational innovations. Addressing the role of food production in society, including ethical issues, good wages and working conditions for employees in the developing countries, the world food and water supply can inspire and ignite new innovation projects, which may be of strategic value for the future.
Participants will investigate the potential of innovation to facilitate behavior change, responsible use and -production, food access, waste reduction, good health and well-being, food sovereignty, climate-beneficial eating.
