{"id":8096,"date":"2020-06-15T18:59:17","date_gmt":"2020-06-15T17:59:17","guid":{"rendered":"https:\/\/futurefood.network\/?p=8096"},"modified":"2022-03-31T09:20:34","modified_gmt":"2022-03-31T07:20:34","slug":"celebrating-together-the-world-day-of-sustainable-gastronomy","status":"publish","type":"post","link":"https:\/\/futurefoodinstitute.org\/it\/2020\/06\/15\/celebrating-together-the-world-day-of-sustainable-gastronomy\/","title":{"rendered":"Celebriamo insieme la Giornata mondiale della gastronomia sostenibile"},"content":{"rendered":"<div data-elementor-type=\"wp-post\" data-elementor-id=\"8096\" class=\"elementor elementor-8096\" data-elementor-post-type=\"post\">\n\t\t\t\t\t\t<section class=\"elementor-section elementor-top-section elementor-element elementor-element-58b63966 elementor-section-boxed elementor-section-height-default elementor-section-height-default\" data-id=\"58b63966\" data-element_type=\"section\" data-e-type=\"section\">\n\t\t\t\t\t\t<div class=\"elementor-container elementor-column-gap-default\">\n\t\t\t\t\t<div class=\"elementor-column elementor-col-100 elementor-top-column elementor-element elementor-element-540aff7b\" data-id=\"540aff7b\" data-element_type=\"column\" data-e-type=\"column\">\n\t\t\t<div class=\"elementor-widget-wrap elementor-element-populated\">\n\t\t\t\t\t\t<div class=\"elementor-element elementor-element-c129447 elementor-widget elementor-widget-heading\" data-id=\"c129447\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"heading.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t<h3 class=\"elementor-heading-title elementor-size-default\">Celebriamo insieme la Giornata mondiale della gastronomia sostenibile<\/h3>\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-337b6395 elementor-widget elementor-widget-text-editor\" data-id=\"337b6395\" data-element_type=\"widget\" data-e-type=\"widget\" data-widget_type=\"text-editor.default\">\n\t\t\t\t<div class=\"elementor-widget-container\">\n\t\t\t\t\t\t\t\t\t\n<p><span style=\"font-weight: 400;\">Il modo in cui il nostro cibo viene consumato ogni giorno non pu\u00f2 non considerare lo spazio da cui parte l'alimentazione della comunit\u00e0: la cucina. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Non si tratta di un semplice ambiente in cui cucinare e servire, ma deve essere delineato come un ecosistema vibrante in cui gli alimentatori e le materie prime si interfacciano con i punti di contatto cruciali dei nostri sistemi alimentari: preservare la naturalit\u00e0 e i benefici degli ingredienti evitando lavorazioni inutili, proteggere ed esaltare il loro gusto, ostacolare la contaminazione o lo spreco di cibo, ma anche relazionarsi con le sfere che il cibo include: accesso al cibo, ingredienti responsabili dal punto di vista ambientale provenienti da un'agricoltura intelligente dal punto di vista climatico, sovranit\u00e0, inclusione sociale e culturale.<\/span> <span style=\"font-weight: 400;\">Per questo motivo, attraverso i nostri Food &amp; Climate Shapers Digital Boot camps, lanciati insieme alla FAO, abbiamo iniziato ad affrontare questo tema attraverso l'approccio della Regenerative Kitchen, che descrive la cucina del futuro non solo con strumenti hi-tech intelligenti o ingredienti innovativi, ma anche come il luogo in cui le persone sviluppano piatti per un mondo migliore, utilizzando i prodotti in modo responsabile. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">La rigenerazione delle cucine inizia con la realizzazione di ricette che, dapprima, mettono in evidenza le esigenze del nostro Pianeta (utilizzando ingredienti di provenienza locale, stagionali, freschi e che facciano riferimento a uno stile di vita prevalentemente vegetale), poi con la costruzione di strategie che favoriscano nuovi e migliori comportamenti per le Persone e, una volta avvenuto il cambiamento dei consumatori, con il raggiungimento di una definizione generale di Prosperit\u00e0 sociale, ambientale ed economica, costruendo cos\u00ec i tre binari che anche l'Agenda 2030 delle Nazioni Unite per lo Sviluppo Sostenibile sottolinea per i sistemi alimentari.<\/span> <span style=\"font-weight: 400;\">Un modo per realizzare questa strategia?
